Commercial Ice Machine Guide

Quick answer

Most ice machine problems come from scale, slime, a dirty condenser, water supply or a bin control fault, and the food code treats ice as food, so cleaning is not optional. Cube machines and flaker or nugget machines fail differently; the brand pages and code pages below explain what each light or beep means.

Covers cube and flaker (nugget and flake) ice machines from Manitowoc, Hoshizaki, Scotsman, Ice-O-Matic, Follett and other brands: how they work, why they stop, how to keep them clean, what they cost to buy, lease or repair, and how to size one.

Frequently asked questions

Do new self-contained ice machines use different refrigerant?

Yes. Since 1 Jan 2026, new self-contained ice machines up to 1,000 lb a day (batch) or 1,200 lb a day (continuous) must use refrigerants under 150 GWP. Existing machines can still be repaired.
