Hoshizaki Ice Machine Troubleshooting and Cleaning Guide

Commercial ice machines

Updated October 14, 2026

Quick answer

Hoshizaki is known for crescent cube machines (the KM series), plus square cube, nugget (Cubelet) and flake machines. Many KM controls signal faults with a beep pattern and lights. Scale, dirty condensers and water supply cause most problems, and Hoshizaki's cleaning sheets give model-specific products and steps.

Hoshizaki lines you may have

  • KM crescent cubers. Modular and undercounter machines making crescent ice. Faults are often signaled by a set number of beeps; see Hoshizaki beep codes.
  • Square cube and nugget/flake machines. Different evaporator designs with their own wear points.

Hoshizaki symptoms and where to start

Crescents small or partialFilter date and water supplycube quality
Crescent sheet slow to releaseScale on the evaporatorharvest problems
F series or DCM squealingTurn off; scale on the augernoises

Owner checks, in order

  1. Count the beeps. Many KM controls signal faults with a set number of beeps; note the count and any lit LEDs before resetting. See Hoshizaki beep codes.
  2. Water. Supply valve open, filter in date.
  3. Condenser. Clean the grille on air-cooled units.
  4. Bin control. Check the bin control actuator or sensor moves freely and is not iced in.
  5. Food zone. Look for scale on the evaporator and slime on the water system.

Hoshizaki lines and their quirks

F seriesFlake; -C models make cubelet (nugget)Auger, gear motor and bearing wear; scale at the extruding head

Hoshizaki's literature says its flakers squeeze water from the ice at the extruding head, producing hard, dry flakes.

Hard water by area

Hoshizaki machines on Zone 7 groundwater (2025 average 318 mg/L) or Santa Clara County groundwater (average over 250 mg/L) scale far faster than those on SFPUC water (2025 average 62 mg/L). See hard water by area.

Hoshizaki cleaning details

Hoshizaki's cleaning sheets are written per model family. The KM-61/101/151 sheet requires cleaning and sanitizing at least once a year. The KM-340 to 901 sheet repeats the sanitizing rinse two more times for ice and food safety. Sheets warn not to use ammonia-type cleaners and to wear liquid-proof gloves and goggles. Enter your model number on Hoshizaki's support site for the right sheet, and shorten the interval on hard water or in yeast-heavy rooms.

Cleaning and descaling

Hoshizaki's cleaning sheets are model-specific. The sheet for the KM-61/101/151 says the machine must be cleaned and sanitized at least once a year; other sheets describe procedures and repeat-rinse steps. Hoshizaki warns not to use ammonia-type cleaners. Find your model's sheet on Hoshizaki's support site. See choosing a cleaner.

Repair

For Hoshizaki repairs, see our Hoshizaki ice machine repair page.

Our technicians service Hoshizaki KM, F and DCM equipment in Santa Clara, San Mateo, Alameda and San Francisco counties.

Crescent ice and dispensers

Hoshizaki's crescent cube is popular on dispensers because its curved shape resists bridging. When a KM head over a dispenser starts producing thin or fused crescents, the dispenser is usually the first to complain, with jams at the chute. Fixing the cube quality upstream usually fixes the jams. See dispensers vs bins.

Summer and Hoshizaki output

Like every air-cooled machine, a KM head loses output as room and water temperatures rise. Check the production table on your model's spec sheet at your real room temperature, and keep the condenser clean before the warm months.

Before you call

Count the beeps twice, note which LEDs are lit, and if you can, record a short video. Have the KM, F or DCM model and serial number from the data plate and the date of the last cleaning. On F series and DCM units, say whether you heard squealing before the fault.

Parts and manuals

Hoshizaki posts manuals and cleaning sheets by model on its support site. Genuine parts are the safest choice on sensors and controls, where small differences change behavior.

When to call a technician

If a Hoshizaki machine shows the same fault after one reset, or makes ice slowly after the condenser and filter are sorted, call a technician. Refrigeration repairs need an EPA-certified tech.

Frequently asked questions

How often should a Hoshizaki be cleaned?

Follow your model's cleaning sheet. Some small KM models specify at least once a year; hard water or slime calls for more often.

Where is the reset on a Hoshizaki?

It varies by model; check the manual before resetting, and note any beep pattern first.

Can I clean a Hoshizaki myself?

You can run the clean cycle per the manual. A full clean with panels off is better done by a trained technician.

Do you repair Hoshizaki ice machines in the Bay Area?

Yes. Our C-38 technicians service Hoshizaki machines in Santa Clara, San Mateo, Alameda and San Francisco counties.

What do Hoshizaki beeps mean?

Many KM controls count beeps to indicate a fault type. Note the count and see our Hoshizaki codes page before resetting.

Does Hoshizaki allow bleach for sanitizing?

Some Hoshizaki cleaning sheets specify a sanitizer and mixing ratio; follow the sheet for your model exactly.
