    An ice machine is the piece of kitchen equipment nobody thinks about until it stops, and then it stops service at the bar, the drive-through and the dining room at once.     Ice Machine Problems We Fix

    Most calls we take fall into a handful of patterns, and several of them start as a slow decline rather than a hard failure:

    • No ice at all — water supply shut off or a clogged inlet valve, a tripped high-pressure or safety switch, or a failed water pump or control board.
    • Cloudy or white cubes — dissolved minerals and scale rather than a failed component, and a sign the machine is overdue for descaling.
    • Production falling off — a fouled condenser coil, scale-clogged water distribution, warm ambient air around the machine, or a low refrigerant charge.
    • Slow harvest or ice sticking to the evaporator.
    • Water leaking from the machine or the bin.
    • Sanitation problems — slime and biofilm in the water path, which is a health-code exposure as much as an equipment one.

    Cleaning, Descaling and Bay Area Water

    Bay Area tap water is moderately hard, and that single fact drives most ice machine failures we see. Calcium and magnesium concentrate as the cube freezes, which is what makes ice cloudy, and the same minerals build up as scale in the water distribution and on the evaporator until the machine runs longer and harvests less each cycle.

    Manufacturers generally call for a full clean and sanitize at least every six months. On Bay Area water we would rather see it every three to four months, and monthly inspection on high-volume bars and restaurants. Descaling has to be done with a nickel-safe ice-machine descaler — not vinegar or a generic acid, which attack the plating and food-contact surfaces — and the sanitizer is a separate step, never mixed with the descaler.

    A neglected ice machine is not just a slow one. Scale and biofilm turn it into a sanitation problem that produces poor-quality ice, and that is a health-department exposure for any food-service operator. A dedicated scale-reducing and sediment filter, changed about every six months, prevents most of it.

    Ice Machine Questions We Get Asked

    Why is my commercial ice machine not making any ice?

    The usual causes are a shut-off water supply or clogged inlet valve, a tripped high-pressure or safety switch after the condenser coil has fouled, or a failed water pump or control board. Before you call, confirm the water line is open and the machine is not sitting in a cleaning or off cycle, and check that an air-cooled condenser is not packed with dust. If it is none of those, it needs a technician.

    Why is my ice cloudy or white instead of clear?

    Cloudy ice is almost always water chemistry rather than a broken part. Bay Area tap water is moderately hard, so calcium and magnesium concentrate as the cube freezes and get trapped as white haze. Heavy mineral loading also slows the harvest and softens the cubes. The fix is a proper descale with a nickel-safe ice-machine descaler, followed by a separate sanitizer.

    How often should a commercial ice machine be cleaned and descaled?

    Manufacturers generally call for a full clean and sanitize at least every six months. In hard-water areas like the Bay Area, every three to four months is the safer interval, and high-volume restaurants and bars should be inspecting monthly. Skipped cleanings are the most common reason a machine slows down, produces cloudy ice, or fails early.

    Do I need a water filter on a commercial ice machine?

    We recommend one on any commercial machine on Bay Area water. A scale-reducing and sediment filter protects the water valve, pump and evaporator, produces clearer ice, and extends the life of the machine. Filters are inexpensive and are typically changed about every six months.
