Most Manitowoc calls we take come down to three things the manual spells out: a machine that has stopped itself on a safety limit, a site that does not meet the installation limits, or a descale that is overdue. How a Manitowoc cube machine decides to stop

On Manitowoc's S Model machines, water flows across the evaporator until the ice is thick enough for the water to touch the ice thickness probe. Hot refrigerant gas then warms the evaporator and the sheet of cubes slides into the bin. If cubes hold the water curtain open, the machine shuts off until the curtain closes again, which is how it knows the bin is full (Manitowoc S Model manual).

The control board also watches its own cycle times and stops the machine when they go wrong:

• Safety limit 1, long freeze. If a freeze cycle reaches 60 minutes the board forces a harvest. After 6 of those in a row, the machine stops.
• Safety limit 2, long harvest. On single-evaporator models a harvest is cut off at 3.5 minutes (7 minutes on multiple-evaporator models). After 500 in a row, the machine stops.
• Safety limit 3, low pressure. On multiple-evaporator models, three low refrigerant pressure events in a row stop the machine and flash the harvest light.

To see which one tripped, the manual says to move the toggle switch to OFF and back to ICE and watch the control board: the light blinks once, twice or three times for the limit that stopped it (Manitowoc S Model manual). Manitowoc installation limits we check on every call

A machine that keeps failing is often installed outside the limits in its manual (Manitowoc S Model manual):

• Room temperature. Self-contained air-cooled machines need air between 40°F and 110°F, away from heat-generating equipment and direct sunlight. Hot back rooms, spots beside ovens and closed hotel alcoves run at the edge of that range, so production drops in summer.
• Water pressure. Ice-making water must be between 20 and 80 psi. Above 80 psi, Manitowoc calls for a pressure regulator.
• No hot water. The machine must not be connected to a hot water supply.
• Drains. Drain lines need a 1.5 inch drop for every 5 feet of run with no traps, the bin and the machine each need their own drain line, and both must be vented. Manitowoc gives these rules to stop drain water flowing back into the machine and the bin: see leaking and ice quality problems.
• Voltage. Supply voltage may vary no more than 10 percent from the rated voltage at start-up.

Ice bridge thickness

Manitowoc sets the ice thickness probe at the factory so the bridge joining the cubes is about 1/8 inch thick. A third of a turn on the adjusting screw changes the thickness by about 1/16 inch (Manitowoc S Model manual). Thin, broken slabs or thick slabs that will not release are worth a service call, not a guess with the screw.

Manitowoc descaling and sanitizing schedule

Manitowoc says to descale and sanitize every six months, and to have a service company test the water and recommend treatment if the machine needs it more often. It also says to clean the condenser at least every six months, because a dirty condenser raises operating temperatures, cuts ice production and shortens component life. Maintenance is the owner's job: the manual states that maintenance procedures are not covered by the warranty (Manitowoc S Model manual).

California requires ice makers to be cleaned at the frequency the manufacturer specifies (HSC 114117) so that six-month schedule is the one the food code holds a Manitowoc machine to. We cover the process in ice machine cleaning and sanitizing and scale control in water filters.

Replacing a Manitowoc machine

If the repair does not make sense, we size and install the replacement, including the drain, water and ventilation limits above. New self-contained ice machines up to 1,000 pounds per day (batch) or 1,200 pounds per day (continuous) have been limited to refrigerants with a GWP under 150 since January 1, 2026 (40 CFR 84.54).
