A walk-in freezer is a 15 to 20 year decision that has to fit your space, your product and the refrigerant rules in force the day it is installed. What we plan before anything is ordered

• Size and layout. How much product you store, how it arrives, how often staff go in, and shelving that keeps air moving.
• Location. Indoors, outdoors or a combination box that shares a wall with a cooler. The floor, the path for panels, and where the condensing unit can breathe.
• Refrigeration system. Self-contained or a remote condensing unit, indoor or outdoor, and which refrigerant the rules allow for new equipment (below).
• Power, drains and lighting. Electrical capacity, a drain route for the evaporator, and lighting rated for the cold.
• Permits. Ask your city building department and your county environmental health office whether your project needs a permit or plan review before work starts. We help you gather the equipment information they ask for.

Federal requirements every new walk-in must meet

The Department of Energy sets the rules for walk-in coolers and freezers in 10 CFR 431.306 (source). For a freezer they include:

• Automatic door closers that firmly close standard-size doors, and strip doors, spring-hinged doors or another way to limit warm air getting in while doors are open.
• Wall, ceiling and door insulation of at least R-32, and floor insulation of at least R-28.
• Electronically commutated or three-phase evaporator fan motors under one horsepower, and minimum efficiency ratings for the refrigeration system.

Stricter walk-in standards that DOE finalized in December 2024 were withdrawn in May 2025 under the Congressional Review Act (source), so compliance dates you may see quoted online for those rules no longer apply.

Refrigerant rules for new walk-in freezers

This is where most online advice is out of date. As of September 2026:

• Federal. EPA's Technology Transitions rule limits new remote condensing units in retail food refrigeration to refrigerants with a global warming potential under 1,400 from July 27, 2026, tightening to 150 or 300 (depending on charge size) on January 1, 2032 (40 CFR 84.54). That limit was relaxed from 150/300 by a final rule published May 26, 2026 (source).
• California. CARB bans R-404A and R-507A in new remote condensing units (since 2019) (source), and new refrigeration systems holding more than 50 pounds of refrigerant in new retail food facilities must use refrigerants with a GWP under 150 (source).
• Bigger systems. Facilities with a system over 50 pounds of high-GWP refrigerant fall under CARB's Refrigerant Management Program, with registration and periodic leak inspections (source).

Drains and health code details

California requires walk-in units to drain through indirect waste piping with an air gap into a floor sink (HSC 114193), and every refrigeration unit needs a thermometer in its warmest part (HSC 114157). Freezer drain lines also need heat so defrost water does not refreeze in the line. We build these in from the start, which is cheaper than fixing them after an inspection.

How an installation runs

1. Site visit, measurements and a written scope.
2. Equipment selection and ordering: box, doors, evaporator, condensing unit and controls.
3. Panel assembly, door hanging and sealing, then refrigeration piping, electrical connections and drain.
4. Evacuation, charging and pull-down, then a check of temperatures, defrost and alarms.
5. Walk-through with your staff, and a maintenance schedule so the warranty and the equipment last.
