What the rules and the manufacturers say about cleaning
- The California Retail Food Code requires ice bins and the enclosed parts of ice makers to be cleaned as often as the manufacturer specifies or, if it gives no schedule, often enough to prevent soil or mold build-up. (Health & Safety Code 114117)
- Hoshizaki’s cleaning sheet for its KM-series cubers says to clean and sanitize at least once a year, and more often where water quality is poor. (Hoshizaki)
- Scale from hard water is a common cause of slow harvest and low ice output. A maintenance visit should include descaling, not just a wipe-down.

How often should a commercial ice machine be cleaned?
At least as often as the manufacturer specifies; that is what the California Retail Food Code requires. Why is my ice machine making less ice?
The usual causes are scale on the evaporator, a clogged water filter, a dirty condenser coil or high room temperature around an air-cooled unit. Check the filter and the space around the condenser first; scale and refrigerant faults need a technician.
What license should an ice machine repair company have?
Refrigeration work in California falls under the C-38 license classification. Check it on the CSLB license lookup.
