Home › Commercial Refrigeration Guide › Ice Machine Guide › Ice Machine Won't Harvest: Why the Ice Stays Stuck
Updated October 14, 2026
Quick answer
When ice will not drop, the machine cannot warm the evaporator enough to release it, or it never gets the signal to try. Scale on the plate, a failed hot gas valve, a faulty sensor or switch, and low refrigerant are the usual causes. Most need a technician, but scale is often preventable.
How a healthy harvest should look
At the end of the freeze, the control opens a hot gas valve that warms the evaporator for a few minutes. The ice sheet slides off and drops into the bin. A curtain, switch or sensor confirms the drop, and the machine starts the next freeze. See how harvest works.
Causes, most likely first
| Cause | Clue | Who fixes it |
|---|---|---|
| Scale on the evaporator | White crust on the plate or trough; slow harvests getting slower | Owner or technician descale |
| Harvest not triggered | Ice grows very thick; machine never switches | Technician (probe, control) |
| Hot gas (harvest) valve failed | Harvest starts but plate never warms | Technician (refrigeration) |
| Harvest-assist part failed | Some models use a motor, air pump or water assist | Technician |
| Curtain or bin switch stuck | Ice dropped but machine thinks it did not | Owner can check it moves freely |
| Low refrigerant | Partial freeze plus weak harvest | EPA-certified technician |
| Machine not level | Sheet hangs on one side | Owner or technician |
Step-by-step owner checks
- Note the fault. Write down the code, light or beep pattern.
- Look at the ice. Is it extra thick (harvest never triggered) or normal thickness but stuck (release failed)?
- Check the curtain or bin switch. It must swing freely and return.
- Check for scale. White crust on the evaporator edges and trough.
- Check water. Some machines use water flow during harvest.
- Turn off and let the ice melt if you need to; do not chip it.
What the findings mean
| Finding | Meaning |
|---|---|
| Very thick slab, still freezing | Harvest never triggered: thickness probe or control |
| Normal thickness, stuck after harvest starts | Release failure: scale, hot gas valve, harvest assist, refrigerant |
| Curtain stuck open | Machine thinks ice did not drop, or stops |
| Stuck only on one side | Not level, or uneven scale |
Brand notes
- Manitowoc: Indigo NXT logs long-harvest events on its display; descale with Manitowoc's cleaner before anything else.
- Hoshizaki KM: a beep pattern indicates the fault type; see Hoshizaki codes.
- Scotsman Prodigy: a long-harvest indication is common with scale.
- Ice-O-Matic CIM: check the selector is on ICE after a cleaning.
Do not chip ice off the plate
Prying ice off with a tool can scratch the evaporator plating or puncture refrigerant tubing. A damaged evaporator is one of the most expensive parts to replace. Turn the machine off and let the ice melt, or use the manufacturer's procedure.
Fault codes
Most modern controls log a long-harvest or long-freeze fault when harvest fails. Write the code down before you reset. See Manitowoc, Hoshizaki, Scotsman and Ice-O-Matic codes.
Prevention
Regular descaling and filtration prevent most harvest problems. See hard water and scale and ice machine maintenance plans.
What a technician does
- Asks what changed and reads any stored fault codes or lights.
- Checks supply voltage, water pressure and the filter.
- Times a full freeze and harvest (or watches auger load on a flaker) and compares it to the manufacturer's spec.
- Inspects the evaporator, water system and sensors for scale and biofilm.
- Cleans and checks the condenser and fan.
- Checks refrigerant pressures and temperatures if the cycle is off spec. Refrigerant work is done by an EPA-certified technician.
- Explains the cause, the fix and the cost before repairing.
Bay Area water and harvest times
Harvest problems rise with hardness. On SFPUC water (2025 average 62 mg/L) scale builds slowly; on Zone 7 groundwater (2025 average 318 mg/L) or Santa Clara County groundwater (average over 250 mg/L) it builds fast, and harvests lengthen within months. Match your descale interval to your water. See hard water by area.
Cube vs flaker
Only cube machines harvest. Flake and nugget machines push ice out continuously, so 'not dropping ice' on a flaker means an auger, delivery or bin-sensing problem instead. See flaker machines.
Keep a log
Write down each fault and when it happened. A pattern (afternoons only, after cleanings) helps us find the cause fast.
Signs harvest is starting to struggle
- The crack and drop of the sheet comes later in each cycle than it used to.
- Corners of the sheet stay stuck after the middle drops.
- Cubes come out with melted, rounded edges from an over-long harvest.
- The bin fills more slowly even though the machine never stops.
Catching these early usually means a descale rather than a valve or board.
Do not run it on manual harvest
Some controls allow a forced harvest for service. Repeatedly forcing harvests to get ice out can overheat parts and hide the real fault. Leave manual modes to a technician.
When to call a technician
If ice stays stuck after the machine has been cleaned, or a long-harvest fault returns after a reset, call a technician. Hot gas valve and refrigerant work requires an EPA-certified tech.

Frequently asked questions
Why does ice stay stuck to the evaporator?
Most often scale, which makes the surface grip the ice, or a hot gas valve that is not warming the plate.
Can I pour hot water on the plate?
No. Thermal shock and water in the wrong places can damage parts. Turn the machine off and let it melt.
How long can a machine run without harvesting?
Controls usually shut it down after a set maximum time and log a fault, to protect the compressor.
Is a harvest problem expensive?
A descale or switch fix is minor. An evaporator or compressor repair is major; see repair vs replace.
Why is my ice sheet very thick and not dropping?
Harvest was never triggered, usually a thickness probe or control issue. Turn the machine off and call for service.
