Home › Commercial Refrigeration Guide › Ice Machine Guide › Ice Cubes Stuck Together: Bridging and Clumping Explained
Updated October 14, 2026
Quick answer
Cubes stick together for two different reasons. If they leave the machine as one slab, the ice was frozen too thick and bridged across the plate. If they clump later in the bin, melt water is refreezing, usually because of slow use, a warm bin or a drain problem.
Two kinds of sticking
| Where it happens | What it looks like | Usual cause |
|---|---|---|
| On the evaporator | Cubes drop as a thick connected sheet | Ice thickness set too thick; dirty probe; scale |
| In the bin | Loose cubes fuse into chunks over hours | Low ice turnover; melt water refreezing; poor bin drainage; warm room |
Bridging on the plate
Cube machines are designed to leave a thin bridge of ice between cubes so the sheet falls in one piece and breaks apart in the bin. If that bridge is too thick, the sheet will not break up. Causes include a thickness probe that is dirty or misadjusted, scale that slows harvest, and a long freeze. See how harvest works.
Clumping in the bin
- Slow use. Ice that sits for days melts slightly and refreezes. Machines sized too large for the business show this most.
- Bin drain blocked. Standing water at the bottom melts and refreezes the lower layer.
- Warm bin or room. A damaged bin door or gasket lets warm air in.
- Ice shape. Half cubes and nugget ice pack tighter and clump more than full or crescent cubes.
What to do
- Break up clumps with a clean, food-safe ice scoop, never a glass or a sharp tool that can chip the bin liner.
- Check the bin drain for standing water.
- Keep the bin door closed and its gasket intact.
- If the machine is oversized, a lower bin level setting (where available) keeps ice fresher.
- Clean and descale on schedule so harvest stays fast.
Dispensers
In a dispenser, clumped ice jams the agitator and chute. That is one reason crescent and half cubes are preferred for dispensers. See dispensers vs bins.
Step-by-step checks
- Catch a fresh harvest: is it a sheet that breaks apart when it lands, or a solid slab?
- Look at the bin bottom for standing water.
- Check the bin door gasket for tears and gaps.
- Check room temperature around the bin.
- Think about turnover: how long does ice sit before it is used?
What the findings mean
| Finding | Meaning | Fix |
|---|---|---|
| Fresh harvest is a thick slab | Bridge too thick: probe, scale, freeze time | Technician adjusts and cleans |
| Fresh cubes separate, clump overnight | Slow use, refreezing | Lower bin level, rotate ice |
| Water pooled at the bin bottom | Blocked bin drain | Clear the drain |
| Clumps only near the door | Warm air leak | Replace the door gasket |
Brand and ice-type notes
- Hoshizaki crescent cubes are designed to resist bridging in dispensers.
- Half-dice cubes from Manitowoc, Scotsman and Ice-O-Matic pack tightly, so they clump sooner if they sit.
- Nugget ice from Follett, Scotsman and Hoshizaki cubelet machines is soft and can fuse in a warm bin.
Health code reminder
Breaking clumps is fine with a clean scoop. Never use hands, a glass or a tool that can chip the bin liner, and store the scoop outside the ice. Ice is food under the FDA Food Code, so the bin and scoop must stay clean.
What a technician does
- Watches a fresh harvest to see whether the sheet bridges too thick or clumps later in the bin.
- Checks the ice thickness probe setting and cleans it.
- Measures harvest time and inspects the evaporator for scale that slows release.
- Checks the bin drain, door gasket and bin insulation.
- Reviews how much ice you use against how much the machine stores.
- Adjusts the bin level control where the model allows.
- Explains which fix applies: machine adjustment, cleaning, drain repair or a usage change.
Bay Area factors
Clumping is worse in warm back rooms and in summer, and on hard water where scale lengthens harvests. SFPUC water averaged 62 mg/L hardness in 2025; Zone 7 groundwater averaged 318 mg/L. See hard water by area.
Right-size the bin level
If your business uses far less ice than the machine makes, ice sits longer and clumps. Some machines and bins allow a lower fill level or a shorter bin control setting; a technician can adjust it so you keep a fresher, smaller reserve. If the machine is badly oversized, see sizing.
Dispenser jams start here
When ice clumps in a dispenser's hopper, the agitator strains, the chute jams and staff start hitting the lever harder. Clearing clumps early and keeping ice turning over protects the dispense motor. See dispensers vs bins.
When to call
Call a technician when fresh harvests keep dropping as a solid slab after a cleaning, or when a dispenser jams repeatedly.
When to call a technician
If cubes keep dropping as a solid slab after a cleaning, call a technician to check the thickness probe and harvest system. A blocked bin drain is a plumbing fix.

Frequently asked questions
Is it normal for cubes to stick a little?
Yes. A thin bridge is by design. The sheet should break apart easily when it lands.
Why does ice clump overnight?
Low use and slight melting. Ice refreezes into clumps when it sits.
Can I adjust the ice bridge?
Some models allow a probe adjustment. A technician should set it to the manufacturer's spec.
Does nugget ice clump more?
It can, because it is softer and packs tightly. Regular use and good drainage help.
Why does my ice come out as one big slab?
The ice bridge is too thick, usually from a dirty or misadjusted thickness probe or scale. A technician can clean and set it.
Can clumped ice be used?
Yes, if the bin is clean. Break it with a clean scoop.
