Home › Commercial Refrigeration Guide › Ice Machine Guide › Small, Cloudy or Hollow Ice Cubes: What Causes Them
Updated October 14, 2026
Quick answer
Cube quality tells you a lot about the machine. Small or hollow cubes usually mean not enough water reached the evaporator or harvest started too early. Cloudy cubes usually mean minerals, scale or a dirty water system. Most causes are fixable with cleaning, filtration or a sensor repair.
Match the cube to the cause
| What the cubes look like | Most likely causes |
|---|---|
| Small or thin everywhere | Ice thickness probe dirty or set thin; harvest starting early; low water |
| Hollow or dimpled centers | Short freeze; low water flow; weak pump; clogged distribution tube |
| Full on one side, partial on the other | Blocked distribution holes; machine not level; uneven refrigerant feed |
| Cloudy or white | High mineral content; scale; dirty water trough |
| Soft, wet or slushy (cube machine) | Refrigeration problem; harvest starting too soon |
| Bad taste or odor | Slime or mold in the water system; old filter; contaminated bin |
Why cubes come out cloudy
A cube machine freezes water layer by layer while it circulates. Pure water freezes first, and dissolved minerals stay in the water that drains away. That is why good cubes are clear. When the water is very hard, the filter is spent, or the trough is scaled, more minerals get trapped and the cubes turn cloudy. Cloudy ice is not automatically unsafe, but it is a sign the machine needs attention. See scale and hard water.
Why cubes come out small or hollow
- Water not reaching the plate. A low water level, a clogged inlet screen or filter, or a weak pump leaves gaps.
- Harvest too early. A dirty ice thickness probe can be fooled into signaling harvest.
- Distribution tube blocked. Scale or slime blocks the small holes that spread water across the plate.
- Not level. A tilted machine sends water to one side.
- Refrigeration issues. Low refrigerant shows up as a plate that freezes only in part.
Step-by-step owner checks
- Look at a full sheet or a scoop of fresh cubes, not ice that has sat in the bin.
- Check the water filter date and pressure gauge if fitted.
- Open the food zone (if your manual allows) and look for white crust on the trough, distribution tube and evaporator.
- Check the machine is level front to back and side to side.
- Run a clean cycle with the approved cleaner if scale is visible.
- Compare a fresh batch afterward.
Brand notes
- Hoshizaki KM: crescents should be fully formed; thin crescents point to water distribution or scale.
- Manitowoc Indigo NXT: the touch display may log a long-freeze or harvest alert alongside small cubes.
- Scotsman Prodigy: a slow water fill indication often accompanies partial cubes.
- Ice-O-Matic CIM: check the water level sensing; some models stop on low water.
How cleaning changes cube quality
A full clean and sanitize removes the scale and biofilm that cause cloudy ice, odor and blocked water holes. Follow the manufacturer's procedure and use only the cleaner it approves. See cleaning vs sanitizing and our ice machine cleaning service.

Water quality by area
Cloudiness tracks hardness. SFPUC water averaged 62 mg/L in 2025; Zone 7 groundwater averaged 318 mg/L; Santa Clara County groundwater averages over 250 mg/L. On hard water, filtration with scale inhibition and a shorter descale interval keep cubes clear. See hard water by area.
What a technician does
- Tests water quality at the machine, including hardness and total dissolved solids (TDS).
- Checks the filter cartridge, its date and the pressure drop across it.
- Checks the water inlet valve and fill level in the sump.
- Inspects the distribution tube and its holes for scale or slime blockages.
- Checks the water pump's flow over the plate.
- Times the freeze cycle and checks the ice thickness probe and its setting.
- Recommends descaling, filtration or a part, and sets a cleaning interval for your water.
Bad taste or smell
Off-tastes usually come from biofilm in the water system or bin, an old filter, or ice absorbing odors from stored food. Treat it as sanitation: discard the ice, clean and sanitize, change the filter. See slime and mold.
Hollow centers vs dimples
A small dimple in the center of a full cube is normal on many machines: it is the last spot to freeze before harvest. A deep hole or a cube that is a thin shell means the freeze ended early or water did not reach that cell. If dimples grow week by week, check the filter and the thickness probe before the cubes turn into shells.
When to replace the filter early
Change the cartridge before its date if water pressure at the machine drops, cubes shrink after a recent filter change elsewhere in the building, or your water supplier switches sources seasonally.
When to call a technician
If cubes stay small or hollow after a cleaning and a new filter, or ice is soft on a cube machine, call a technician. Probe, pump and refrigeration repairs need the machine opened.

Frequently asked questions
Is cloudy ice safe?
Cloudiness is usually minerals, not germs. But it means the machine needs cleaning, and odor or taste problems should be treated as a sanitation issue.
Why are my cubes smaller than before?
Most often a dirty thickness probe, a clogged filter, or low water flow. Cleaning and a new filter fix many cases.
Can I make clearer ice?
Better filtration and regular descaling help. Some gourmet cube machines are designed for very clear ice.
Why do some cubes have holes?
Water did not cover that part of the plate long enough. Check the filter, the pump and the distribution tube.
Will a new filter fix cloudy ice?
It helps if the old cartridge was spent. On very hard water, add scale inhibition and descale more often.
